Casa De Abuela Mexican Rice
Ingredients
- 2 Cups of rice
- 4 cups of liquid (blended liquid mixture)
- Cooking oil of your choice (Avocado oil recommended)
Blended Liquid Mixture
- 1 Roma Tomato
- 1/4 White Onion
- 1 Garlic clove
- 1/2 Tablespoon Casa de Abuela All Purpose Seasoning
- 1/4 Tablespoon chicken tomato bouillon
- 1-1/4 Cups of water (adjust to make 4 cups of total liquid mixture)

- Blender
- Knife
- Cutting board
- Saute pan with lid
- Large cooking spoon
Step 1: Prepare the Blended Liquid Mixture
Add tomato, onion, garlic, Casa de Abuela All Purpose Seasoning, chicken tomato bouillon, and 1¼ cups of water into the blender. Blend until smooth. Make sure the total liquid equals 4 cups. Add more water if needed.
Step 2: Toast the Rice
Heat a pan over medium heat and add cooking oil. Add rice and stir continuously until it turns light cream or light brown.
Step 3: Add the Liquid Mixture
Slowly add the blended liquid mixture and stir gently to combine.
Step 4: Cook the Rice
Cover with a lid, reduce heat to low, and cook for 10–15 minutes. Do not stir while cooking. Cook until the liquid is absorbed and the rice is soft.
Step 5: Serve and Enjoy
Fluff rice with a spoon and serve warm with carne asada, chicken, tacos, or beans.
